So I'm watching predator, and wanting to know what kind of helicopter they are using in the beginning. Looks like a Huey but isn't

What knives do they use?

I still vote for Bell 205210, the ship in the opening shot of the movie was not a twin, 212 models,  1-2's are twins.

Not a 210, unless they made the movie twenty years in the future because it was so bad ass.

Don't go that route, just accept that they are helicopters of the general type used, trust me on this. To this day it drives me nuts watching any movie that involves Army helicopters in any way. I can't count the number of times I have been watching a movie only to have it disrupted by "that is a Hotel Model, they would have had Bee models in 65" or some crap like that. My father does it, my father in law does it. It drives me nuts.

There are many different versions.

The UH-1Y and AH-1Z have different (two engines rather than one) engines. They are bigger and have a lot of upgrades over the Vietnam era variants.

The helicopters used in We Were Soldiers were in fact UH-1H transports, of the type used in Vietnam; known as "slicks", they were the prime movers in VN; their armed counterparts were UH-1Bs, smaller  in dimensions, but shared the same engine, transmission and rotors as their larger brethren, but also packed firepower in the form of M-60s, 2.75 inch rockets, 40mm grenades and 7.62mm miniguns, some even packing .50caliber MGs and heavy 5 inch rocket pods.

Here; Col. Hal Moore (Mel Gibson) and Capt. Bruce "Snake" Crandall (Gary Sinise) have a chat on the tarmac at Ft. Benning. Notice the threet UH-1H helicopters behind them.

Another scene in the movie, you can see the line of UH-1Hs ferrying reinforcements in the middle of the battle.

FInally; here's a scene at the height of the US assault on the NVA camp; the UH-b is here, firing away with it's side-mounted M134 minigun mounted on an XM27 weapons system. The UH-1B is considerably smaller than the H model.

Just to nitpick.....it's Greg Kinnear....not Gary Sinise.

I may not be 100 percent correct, but I believe the Cav unit portrayed in "We were Soldiers" would have been flying D models at la Trang, not Hotels. During the battle there may have been some B models from other units coming in and out, but wouldn't have been assigned to that unit. In 1965 the B model had been replaced by the D model, the B models were still around, but were less common than the D model at that time. Eventually the Hotel model would be the most common of all variants. The early designated gunships were C models, most designated gunships in the war were M models, although guns were added to most variants at the unit level. The only variant that would have been unlikely to be equipped with guns would have been the V model, which most often had a red cross painted on the nose and doors.

The fuselage of the helicopters changed a great deal from one variant to the other. While they were all easily recognizable as being Hueys, when looked at closely it is fairly easy to tell the differences based on the shape of the engine cowls, doors, and noses. The A and B models were the smallest, the D and H models were over three feet longer, most of that length was added in the center of the fuselage, allowing a higher passenger count.
