last night i wanted to try something different. got out a few smaller potatoes from a new bag, stuck them in the microwave until mostly softened, about five minutes, and crushed them slightly. i left them whole, just mushed. i then deep fried them at 375 deg. until crunchy around the edges. done right, it's a game changer. try it.

Called a "Boston baked Potato"

Microwave or bake till nearly done, still firm.
Peel them and deep fry.

Wifes twist on it is, you slice the potato after it cools and then deep fry the slices. Serve them with Sour cream and Butter

Old technology,kids.....
Grandma would sometimes take left over baked potatoes,slice them thin and fry in the skillet with bacon and  eggs.......

Anybody remember back when Cracker Barrel used to cook their baked potatoes in boiling pine resin? Probably the best baked potato ever.

Boil them whole, smash them,then instead of frying, put a pat of butter on them, pepper and bake.
