Do you have a press? That's the only way I get them the right size/shape.


While I did get that part right, they are still aren't very good. I did everything I was supposed to, but the taste and texture are not right. I think I might need to cook them at a different temp.

Wife made a soup with some leftover smoked brisket that was in the freezer.

Cut up the brisket into ~1” pieces, and put it in a crockpot. Sautéed some mushrooms, dropped those in, and added a package of Lipton onion soup mix, and some beef broth. Heated on high until it was hot, about 2 hours.

Pretty simple, but was really good! The brisket and mushrooms have the broth a very rich flavor,

Last night I did a pan seared beef fillet and sweet potatoes boiled in crawfish seasoning. Didn’t feel like setting up my camp stove outside, so I did a “cold sear” based on a Cook’s Illustrated video I found on youtube. It was a great technique that produced minimal smoke and splatter and a steak that was cooked almost perfect. With a little practice I think it will be my new way to cook steaks indoors.

I'm usually not big on etouffee, but I'd give that a try.  It's very easy to overpower the dish with the flavor of green onions.

None of the vegetables stood out from anything else. The shrimo was the msin flavor that came through.

Next time I may cut back on the amount of roux.

That all looks good.  The Chicken/basil pan fried dumplings  peaked my interest.

Were they time consuming to make?

They were pretty basic, really.  Assembly takes some time I guess, but (like most Cantonese-style dumplings), you can make the filling beforehand.  You can also stage them for a significant amount of time before cooking.

My filling was just garlic, soy, oyster sauce, ginger, a little sake, one green onion, with ground chicken - stir fried.  Let it cool, add basil chiffonade (otherwise the basil wilts).  Quick to make. Would have been better with a little water chestnut for texture.


I made the filling early in the morning, assembled them later, and staged them on a parchment covered sheet pans until I was ready to cook.

Would've posted it the other day, but when I post 'em directly from my phone they show up upside down.  

I had a touch of the grey band she mentions in the video, but it wasn't bad.  Used my carbon steel skillet, as I don't have a true nonstick pan.  I'll tweak it next time I cook it.

She was all kinds of confused. We don't give her people food like we do with our older dog. Took a bit of coaxing to get her to start eating but once she did she scarfed if down quickly.

Wife made chili yesterday. My addition was about 8 oz. of finely chopped Wagyu Tri-Tip along with the meat off of a pair of FANTASTIC ribs we had the other night. Best chili I've ever had.

Knowing my luck, the damn thing would post sideways.

Fried a few pieces of bacon tonight to go with my salad. Baking it would have been easier and less of a mess, but I wanted to fry some in my cast iron pan to help season it.

I made egg salad today for the first time in ages.  Mayo/Dijon/yellow mustard for the binder, diced shallots and celery for some crunch, and a modest bit of sweet pickle relish for a minor note of sweetness.  

Served open faced on some good toasted artisan whole wheat bread with butter lettuce underneath, and topped with a little smoked paprika and chopped fresh dill.

Tomorrow morning, an Aldi barbecue pork shoulder goes into the slow cooker.  I'll make some homemade coleslaw to go with it, and lunch at work should be covered for most of the week.

Baked a few chicken thighs and roasted zucchini, yellow squash, and mushrooms in the oven for lunches this week.

Had a couple of squash that wouldn’t fit on my pan going in the oven, so I pan fried them in lard on the stove top. Made a huge mess, but they tasted ok.
