Today I did a 5 gallon batch of jambalaya for a get together with Mom’s side of the family. Although I thought it could have been better, the family loved it. Got a ton of compliments.

I made my grandma's meatloaf recipe for my wife. Somehow I forgot the milk, but it still came out pretty darn good.

I kept fixing to go plates for myself, and then someone would ask for one so I’d hand it over. Came home with a tiny bowl of it.

Tonight I grilled some pork chops, roasted some broccoli in my oven, and made a hobo packet full of turnips on the grill. Chops and broccoli were pretty good, but the turnips were bitter. Only my second time ever cooking them, so I’m open to suggestions on how to improve their taste.

Look around on Cowboy Kent Rollins YT channel. I've done a bunch of his recipes and 90% of them translate well to the oven from his campfire methods. His Cowboy Chili is pretty good. It's not a traditional bowl of Red and is more like a stew but it's pretty good. Also on YT is a ton of the older Justin Wilson cooking shows. Most of it is comfort food and not all just straight-up cajun stuff.

Lately I've been doing Stove Top Stuffing Meatloaf. It's easy and tasty. Sometimes I do half ground beef and half Jimmy Dean Hot sausage.

For glaze:

1/2 cup ketchup
2 tablespoons brown sugar
1 tablespoon Worcestershire sauce

I haven't had scotch eggs in along time.  They are tasty.

First attempt @ cast iron pan pizza.  Dough was  little doughy.  Maybe next time I will use half the amount of dough.

Still looks damned good.
Never even thought to make one like that (even though I have seen it served that way). I'm going to have to try that one day. Off to look at recipes.

Creamed chicken and biscuits.

The recipe called for tarragon which I don't remember ever tasting before. I'm sure poultry seasoning or any of the spices used in pot pies would be good too.

Yesterday, I took all the frozen, roasted/toasted chicken bones & fingers from cooking last year.  Put them in my 920 All American canner, added carrots & celery, from the garden, and onions, diced….  Salt & pepper…. Cooked about 6 hours, at, just under 15 lbs.  (We are higher than 1,000f above sea level.). Turned it off at 8pm. Covered with a thick towel.  

Still warm, around 4am….by 5, it still had pressure, when I took off the weighted gauge.

Removed the bones, straining through a sieve, and brought the liquid to a boil…….

Cleaned, boiled, and prepped the jars….

6 quarts and 9 pints of chicken bone broth……

Tried reverse sear for the first time.  $20 ribeye.  Came out medium rare.  

I'd do it again, but it takes a long time if you don't let the steak come up to room temp first.  I pulled it at around 110F and seared it.

That's gotta be the cleanest smoker I've seen. Is it new or do you religiously clean it? Mine is lined with what looks like tar.

Tonight, is green chili, beef & potato burritos.  

Basically, fresh diced beef, leftover diced brisket, leftover seared beef….
Leftover, tater tots, crushed.
Green chili, home roasted, peeled, de-seeded & frozen…. Yikes, the mild pkg. was warmer than I expected.  Before I froze it, it was mild…. Not today.  Added a package of hot green chili I had roasted in the spring from Hatch.  Added a touch, Tbs. of onion powder… could have diced some, but I cheated.  

Seared the fat, added the raw meat, then,the cooked meat… burned off the liquid, added the crushed tots, then the green chili.

I lightly butter the flour tortillas, heat, and set aside, until cool enough to fill….

After filling & rolling them up, I return them to the pan, & crisp them…

Made some chicken and broccoli stir fry for my lunches this week. Came out ok, but I winged the sauce and it was a miss. Needs more of everything. Its a solid technique so I’ll write down what I did so I can improve on it later.

Chicken and sausage gumbo, with a made from scratch hog lard roux.  Might be the best gumbo I've ever cooked.  Probably won't be able to do it again but I wrote down my procedure so I can try.

Then you wouldn't have liked this one.

That was my first try, and though it looked good, it was bland and overcooked. #3 and #4 were good though. The family insisted that I make them regularly.

Made some flour tortillas today.  This was my first time ever making any kind of "bread" and its definitely something I'll do again.  I'll have to report back on how they taste; watching my carbs pretty close and I had rice and potatoes at lunch.

I also grilled some chicken pieces and roasted a spaghetti squash in the oven for meals this week, but that wasn't worth taking a picture of.
