Who knows how to make it?

Need some recipes and hints.

I know how to make it. easiest recipe is to follow what's on the cornmeal container, but substitute bacon fat for the oil/shortening used to grease the pan. and if you're making it for my wife, at the very least, double the sugar content. I often tell her she does not like cornbread, but instead likes corn cake. the humor is lost on her.

I will just follow the cornbread box recipe but I will often add diced jalapeno, part of a can of creamed corn and sometimes shredded cheddar cheese....

1C white corn meal
1C Buttermilk
1 tsp Baking powder
1 Egg

Preheat your oven to 420, grease your cast iron pan with bacon grease, get it hot on the stove top, pour in batter and then put it in the oven for about 30 minutes.
This is a good recipe to modify since it is so simple. Adding about 3/4 a cup of sour cream is a good idea too.

We add ceamed corn and diced Jalapeno. The creamed corn keeps it moist and adds texture.

Is there even a recipe for cornbread???  It's always been according to each individual family member around here, sometimes getting passed along, sometimes dying with the cook.

Lotsa cornbread recipes out there.  I think the biggest game-changers are:

1. Bake in a cast iron skillet; and
2. If at all possible, use fresh-ground cornmeal.

We grind our own cornmeal from popcorn and the results are excellent.
