I've got some Mahi fillets and was wondering how everyone prepares these. Typically when I go to a restaurant I get them blackened, which I am sure they just do on a flattop.
So, do you guys grill, use a cast iron skillet, bake, etc? |

I just wanted to update this...finally got around to cooking some Mahi. Pre-heated a cast iron skillet on the cooktop and covered the filet with EVOO and Paul Prudhomme's Blackened Redfish Magic. 5 minutes per side in the skillet and it was done. I also made some baked asparagus (EVOO and S&P, baked for 10 minutes at 425*) and a homemade mango salsa (mango, cilantro, jalapeno, tomatoes, red onion and lime juice).
