I've got some Mahi fillets and was wondering how everyone prepares these.  Typically when I go to a restaurant I get them blackened, which I am sure they just do on a flattop.

So, do you guys grill, use a cast iron skillet, bake, etc?

When I blacken mine, that's exactly what I use is cast iron and a nice coat of Paul Prudhomme's Blackened Seasoning.
I have also marinated them for an hour or so in McCormick Tomato Basil marinade (dry) and then put them on the Big Green Egg and grill them.

I've made this before and it's really good. I added more bay leaves since I think they put an awesome taste on fresh fish.

I just wanted to update this...finally got around to cooking some Mahi.  Pre-heated a cast iron skillet on the cooktop and covered the filet with EVOO and Paul Prudhomme's Blackened Redfish Magic.  5 minutes per side in the skillet and it was done.  I also made some baked asparagus (EVOO and S&P, baked for 10 minutes at 425*) and a homemade mango salsa (mango, cilantro, jalapeno, tomatoes, red onion and lime juice).  Everything turned out awesome and this will definitely be a go-to dish in the future.
