Anyone make this before? It's basically cheese sauce and toast. I think I am going to make it this weekend. |

You might need to use less beer than that recipe calls for, or the sauce may break.......otherwise, you might need to add some processed cheese if its a really hard cheddar. I use evaporated milk vs. the heavy cream.
I use welsh rarebit over a toast, deli ham & turkey, then bake it. It was called a "Prosperity sandwich" at the place I grew up at. Another variation was welsh rarebit over shaved turkey breast and white asparagus. It all originates from the "Horseshoe sandwich" in Springfield, IL. That was a ham steak they cut the bone out of and topped with the sauce. Later it morphed into two hamburger patties on Texas toast, covered with fries, and then topped with welsh rarebit. All very good and still hard to find outside of central IL. |

I love to cook. But I can't for the life of me imagine why I would go through all that work for so little sustenance. Seems like a waste of time and ingredients. Yes it does! Tried the recipe last weekend and it went over well. Tried the "Prosperity sandwich" too on the following day and enjoyed that with a slice of swiss on top. How'd you like it, Raven? |
