Plan on making some home made pastrami and the recipe calls for Morton's curing salt.
I was unable to procure Morton's Curing Salt. I'm sure it can, but am seeking confirmation that regular sea salt(not iodized) will work. Measure for measure, or? Thanks for any advice. Fc2 |
| Regular salt (table, sea, kosher, pickling) is not a substitute for curing salt. Curing salts usually contains nitrates or nitrites as well as a number of seasonings in addition to salt. If you can't find curing salts locally, you might want to either order it online, or find another recipe that has ingredients you can find locally. |

Fc2 Be very careful in using the correct ingredient for a recipe. I don't have any experience with Morton's, but I'm pretty sure you can't just substitute Instacure #1. Use too little of the right ingredient and you risk botulism. Too much and you get nitrate overdoses. |
