I’ve cooked many Filet Mignons before but I have never cooked one over a stove. I’ve grilled, slow cooked them in the oven, or cut them up as steaks. I recently started to slow cook bottom round roasts in a cast iron pot and it forms a great crust around the beef. I basically sear each side of the roast adding a little beef stock and red wine to the pot keeping it somewhat moist. Has anyone tried this method before for a Filet Mignon? If so how did it turn out?

I've toyed with it, but I still think that the Alton Brown method of cooking a steak indoors remains the best option.
