For a number of years, I've traveled often and extensively to South Florida, and one of my very favorite places to grab lunch is at the Rustic Inn Crabhouse in Fort Lauderdale. (it's about a 5 minute drive from Ft. Lauderdale-Hollywood Airport) All of their food is good, but there's one dish that I seriously can't get enough of, and that's their red & spicy "Islamorada Conch Chowder." Granted, they use fresh conch and even when I was living a few miles from the coast in the Northeast and New England, it's not easy to find, so I'm willing to use canned... but I haven't found a recipe that tastes even remotely as good as what they put together. Now that I'm landlocked in TN and not heading to Florida for a few months, I'm back to the drawing board to duplicate this meal. It shouldn't be that different than a recipe for Manhattan Clam Chowder, but I just can't get it right. Anyone try their hand at conch chowder before?
