I'm thinking of buying my wife an "intro flight" for her birthday as she has thought about learning to fly for a long time.

I'm a bit nervous about sending her up with someone I don't know anything about.  Any advice for finding an experienced pilot to take her up?  This is the local place I found http://www.cospilot.com/

Intro flights are generally flown with a flight instructor, so you are already talking about someone who has at least a couple hundred hours under their belt.  Probably the best way is to just go in and talk with the staff when you schedule the flight.

Take a look at the instructor listing on the website and choose an experienced one. It's your money so you should have your choice of instructor, and it looks like they have a bunch of experienced guys.

Seems like they have a pretty solid group of instructors, I wouldn't hesitate to send my wife up with any on the list.
