I plan to use either particle board or plywood to screw on top
of the  1" x 8"s used to provide a storage platform in my garage.

The area over my cars has that type of wood, is over 60 years old
and I'd like to use a 4' x 8' sheet to provide a smooth, single-plane surface
and keep the dust off my cars. (The planks of wood have a 1/2" gap
between them that the sheet would cover)

Is the partilce board termite proof?

(I know it's NOT water-proof)

What do you think?

Do not waste your money on partilce board it is crap and should be outlawed use either real  CDX plywood or chip board

Use OSB (oriented strand board). It is cheaper than CDX, and almost as strong, just not as water resistant.

If you have problems with it getting wet inside your garage, you've got bigger problems...same goes for termites.

Yep, OSB will be fine. If you plan to store stuff on it, put the slick side (the side with the label) facing up.

You know, if you're screwing this down over an already stable surface...IE no need for strength you just want a smoother surface, you could use that 1/4" cedar chipboard people use in closets. The advantage to this is that it would be more insect resistant than other products.

advantech 50 year warranty nail it down and forget it, 20 to 25 bucks per sheet.

Whatever you do, DON"T USE PARTICLE BOARD!

It is subject to abrupt, catastrophic structural failure.

The particle board will be 99% supported by the 1" X 8" planks. (So can't really fail.)

The termite question comes in because I've heard that "most" lumber-yard lumber
HAS termites.

I didn't want to BRING them in. (Have none at this time...)

Perhaps 1/4" thick MASONITE will be better.

(Like I said in my original post, it will be screwed down ON TOP of existing 1" x 8" s)

The Masonite might be neat, and easy to do. Use a narrow crown stapler to put it down fast.

OSB. Its about 5 bucks a sheet. In most houses its used as the roof decking. Its not water proof but its good stuff. Especially for the price.

If you are looking for a smooth surface I would go with MDO (Medium Density Overlay).  It's plywood with a top ply of MDF for a smooth surface.  Then you could polyurethane the top for a durable finish.
