Ballistic. Only iPhone app I've ever paid for
Shot Timer. From Surefire. Free shot timer that works.
Accuweather. Hourly and daily forecasts wit rader dingus.

Airvideo - watch vids on your phone that are stored on your computer.
Istrelok - free ballistics app.
Ballistic - not free but damn good ballistics app. Worth the $ for the factory load data alone.

bargain bin -was free. I do not know if it still is. Tells you what is on sale in the app store. Even if it costs $ it is still worth it. It will pay for itself fast

and you gotta jailbreak it and at minimum get sbsettings and a few toggles for it.

I used Blackra1n and Snow to jailbreak and unlock my iphone and is CAN fuck up your youtube ap and ability to use youtube via Safari.  Seems to happen with 3.1.2 and it doesn't always happen, but did happen to me.  I honestly don't see the point of jailbreaking, but your mileage may vary.  Turned out to be more headache than it was worth to me and I followed all the tutorials to the letter.  I think the iphone is just fine the way it is.

As for apps, these are some must haves to me... will check out those recommended by others.  Most of these were free but a few cost 99 cents and only one was pricey at $9.99

Camera Zoom allows for a digital on 3G phones that do not have native zoom - 99 cents
iVideo Camera allows the still camera to function as a rudimentary camcorder, although only 10 frames per minute - was free or maybe 99 cents
Battery Magic gives usage rates and recharge time, handy - Free
Geico Glovebox (if you have Geico) - Free
Google Earth - Free
Hello Vino (pairing foods and wines) - Free I think
Police Radio provides scanner access to many Fire/EMS/Police transmissions by Department - Free I believe
Pandora radio - Free
