I have a Windows Server running Exchange.
I would like to replicate the data including the Exchange database over a persistent hardware VPN to a NAS.

Any suggestions..?

If the NAS is a NetApp array, you can use the snapvault plugin for Exchange and do it that way.

You could use VMWare Convertor or disk2vhd to make a VM out of the running machine.

Backing up exchange (used to be) is a nightmare.  I would strongly recommend investigating the products that specialize in that task.  If you have a real SAN you may be able to do block level replication, but even that isn't a cure-all.

ETA: The Snap-vault plugin mentioned above is exactly the type of thing I'm talking about.
