Microsoft Flight Sim X is very nice, but kind of demanding in the CPU and graphics department.

X-Plane is also very good, with physics accuracy 2nd to none.

As for hardware, I suggest looking at CH Products.  I've been very, very happy with their Fighterstick, Pro Throttle, and Pro Pedals.  I'm on my second set, but only because I decided to go all USB.  I paid about $300 total for all of 'em in 2001, they're still going strong.  The pedals act as rudder pedals / toe brakes (they slide, as well as go up and down like car-type pedals).  CH also makes a very nice USB yoke and throttle quadrants if you prefer commercial rather than fighter type setups.

Edit:  They changed the name of the Fighterstick.  It used to be the "F16 Fighterstick Pro" when they had both the USB and the older gameport+ps2 keyboard dongle setup.  Now its just the Fighterstick

You should be playing Fighter Ace 3.  It's a blast.

Bombing North Korea is more fun, get Falcon 4.0 and a stick and throttle setup so you can fly like a real F16 (stick in right hand, throttle in left hand.)  When I lived in the barracks as a private and couldnt afford a car I lived on that game, kinda dated but a blast once you figure it out.

Fighter Ace is fine, if you're looking for multi-player, combat.  If you're looking for something to do on the computer alone, that won't cost you money beyond the game it's self, then I'd say Falcon 4.

And for flight controls, you can't go wrong with CH Products line of flight controllers.  I use their Combat Stick 568, Pro Pedals and Pro Throttle (all usb).
