What's the "correct" way of doing them?

I've always done them as a squat to plank to pushup and back up.

I've recently seen a variation where the pushup was omitted.  

Which one is the correct way?

However you want? If it's just for working out, then do what works for you. For me it's a full push into a vertical leap.

Was a woman doing the burpee without the push-up? That's a "scaled" version for those who can't do push-ups.

Generally speaking, a correct burpee includes a push-up and touching an object at least 6" above your max reach on the jump.  Make sure you touch it every rep so you don't cheat yourself on the jump when you start breathing hard and feeling sorry for yourself

Gotta have a pushup and a jump.  Without either of those, it's essentially a different squat thrust variation.

I've seen different variations, some with and without a pushup.

I personally always include a pushup.

People just get down on the ground and never bend their elbows and just get back up.

Some variations:

No push-up burpee - plank to squat to jump
Lateral bar burpee - vertical jump replaced with a sideways jump over barbell
Burpee box jump - vertical jump replaced with box jump
Burpee box jump over - vertical jump replaced with box jump and step down to opposite side

Yeah, I made a spectacle when I missed the box and my buddies had a good laugh and my shins got scraped up pretty good.  I'm pretty coordinated and all, but when I'm start getting tired from burpees I just dunno where and how I'll land.

I love some box jump burpees!  
Gonna have to add some pull up burpees.

My wife scales burpees by doing plank to feet wide to plank and jump.

At my gym when we do them it is a lot about speed (It is a high intensity cardio class). You are basically sprawling into the plank. A push up is almost needed to catch yourself. But it isn't really part of it.

I have done them both ways. Normally I am doing push ups on top of it so I might omit the push up in the burpee.

So I mixed it up tonight. 30 seconds on the punching bag, 2 burpees with a jump and a pullup. Did a few rounds of those. Gonna feel that.

I've always done them without the push-up. To me they're a conditioning exercise, not a muscular endurance exercise.

The crossfit open final Thursday some of the "burpees" were lay down on the floor and get back up.
