I liked speedgoat enchiladas. But my favorite from pronghorns was simply grilling a steak that marinated overnight in a little olive oil and steak seasoning.

For elk I liked making roasts. One time I dropped a big one with a couple of bottles of Sweet Baby Rays in the slow cooker for about 8 hours. It kept getting better every day for leftovers. Grilled backstrap from elk is also hard to beat.

My 9 y/o daughter will kill a bitch to get at a bowl of elk stew or elk gumbo.  Look up just about any recipe for beef stew and substitute.  We also like to marinate elk steak in fajita seasoning and have some great fajitas.  As mentioned above, elk roast is extremely good.  As with most wild game, just cook it slow and, if grilling, make sure not to go over medium rare.

I'm going to add another recipe to that thread just as soon as I can locate my copy.  It's called "Texas Red" and is done up in a pressure cooker with some Cayenne spice.  It is an awesome meal wrapped up in a burrito!

I will be sure to get it posted just as soon as I can find it.  My dad wrote the recipe down for me and I know I put it some place very safe.  I'll PM you when it is posted to the recipe thread.  My dad just came over yesterday and made me another batch.  He just goes from memory anymore.  If we can't locate a copy, he'll have to write it down again.  It's not too complicated, but has to be done right to make the difference.

Hard to beat backstrap, rubbed with Fresh ground salt/pepper on the charcoal for about 3 minutes/side.
