Do you freeze your tomatoes?I have to take the skins off, right? Quoted:

eat them. Make tomato sauce and freeze or can it. Put them in salads, put them on burgers, make paste out of them, whatever you can think of :). Do you freeze your tomatoes?I have to take the skins off, right? I've never frozen them raw, their texture gets all weird if I remember right... Probably could still make sauce with them after, I'm not sure. |

When all else fails, make 'Mater and Basil soup with chives.
Boil 'em, skin 'em after a dunk in cold water, back in the pot with a couple handfulls of fresh Basil, and chives. Boil 'em for 30 min. and run through the mater press. Freeze in plastic containers for a cold and bleak winter day, or use as a base for marinara. No such thing as "Excess" Maters. |
| I usually have this problem right when I don't have time to deal with a lot of hassle. I just wash them, slice them in half inch rounds (doesn't take long), dust them liberally with Italian seasoning and dump them into the dehydrator until crisp. They make a nice savory trail food. |
