I have 3 Roma plants growing this year which are starting to produce tomatoes. Ideally, I'd like to be able to can most of them for use with sauce. However, the issue becomes the number of tomatoes isn't exactly ripe for doing that.

Any suggestions for how to store them until I have enough to make a batch of sauce?

What do you guys do?

i just put mine in the fridge.

I freeze mine.  When i get ready to can them I dump them in warm water and let them thaw out.  Skins come off very easy.
