Put on a super July 14th, checked it today and they had 7 frames filled and capped with honey. Should I put on another super now?

It's awful late.
I'd leave them alone for the winter now.

7 frames full edge to edge, both sides, with 3 more drawn and partial full?  Two hive bodies?  Yes, add a super.
One hive body?   Undrawn foundation in 3 frames?  Leave them alone.

I've been pulling an average 3-4 shallow supers this season on two body hives, and will probably pull another shallow on most of them.

Two hive bodies , with one super with 7 frames in super both sides full, the other three partially drawn comb about 50% or so.
