So every year the dill grows to be 5ft tall, develops heads that flower and by the time I actually have cucumbers to pickle I have no dill heads, what to do???

I have the same problem. The lady at the little garden center where I bought my plants said to dry it for later use.

If you're buying plants try planting a little later into the season and /or save the seeds and just sow them next year. Timing should be right.

Yep, we time the cilantro and dill to coincide with salsa and pickling season. I assume you do let those monsters go to seed and save the dill seed..................

actually, I was told by my mother-in-law to pop the heads off and keep popping the heads off til later in the season. She said it'll keep growing and developing heads......we'll see

My dill is just coming up now, should time right with the cukes, cilantro however, holy crap, that thing got HUGE. I didn't realize it would get so big so fast, I have been giving it away as fast as it grows.

This is what I do with all my herbs. Keep them pruned, and dry what you clip off. You can use dried dill in pickles if you have to, but selectively pruning all season will allow you to store some away dried for other recipes, and leave you fresh heads for pickling.

Mostly heads, its all I use for the most part.

I freeze the feathery parts, its the part I use the most.

Thanks guys. I'm canning pickles over the next two weeks and I will freeze some leftover dill. I like dill in cuke salad, potatoes, on tomatoes.........

Freeze it as it gets ready...pop ALL the flowers off as they come out, When the plant flowers its called Bolting. After it dose this it stops trying to grow because its done what mother nature ment it to do. Just pop them off untill you are done with the plant and then around late july let it go to seed.
