why is my Broccli not heading out thick like the store bought?  the one that headed out i thought it was going to get thicker but then it started flowering so i cut it.  Im a rookie gardener whats wrong with my brocoli?

It is bolting. It got too warm.

Yeah. My son loves it. (he is 7, weird) we eat it even to the point of flowering.

Yeah, you have to cut it when it does that.  90% of mine does pretty good though, even in hot weather.  I've noticed a difference in where I plant it in the garden though. Some places just do better than others.  I plant quite a bit of it because it freezes well.

If you just cut the center head, it'll usually resprout smaller heads from the rest of the plant.

What variety is it?  Calabrese is doing well for me but Di Ciccio bolted to flower.  Around here broccoli is a spring & fall vegi.

Did that last night.  I was ready to dig up the plant when I read this.  I do have lots of other sprouts down lower on the plant.

Im not sure what kind it is i didnt keep the packaging.  Ive got a good head growing on another plant.  three other plants almost got ate in one day by tiny tiny black bugs.  Sevin took care of them and the plants are recovering.

So does an early frost not affect broccolli?

Broccoli is frost tolerant.  I planted mine in Feb.  We had a few nights down to mid 20's.  Survived just fine –– heck I couldn't see any frost damage.

this is a learning year for my wife and I.  I should have planted the broccoli earlier then along with my potatoes.  Ive grown gardens in the past but just squash and tomatoes.

Hell, I harvested mine in February, it was starting to go to flower All depends on what part of the country you're in.
