I used this when I was a butcher a long time ago and it worked well,  I decided to start using it again since ziploc bags suck and I am not ready to spend the money on a good vacume sealer.  Who else uses freezer paper and how long do you keep stuff in the freezer?

The way grocery prices are going these days, I'd just bite the bullet and get the vacuum packager, even if you just get an inexpensive one for now to last until you can afford a better unit.  I've got a $129 FoodSaver that has been going strong for four years, and it has paid for itself many, many times over.  It doesn't take too many freezer-burned T-bones to quickly wipe out any "savings" from using freezer paper.

We wrap once in freezer paper and then in aluminum foil.
Keeps just fine for a few years.
Been doing that 20+ years.

Stuff usually doesn't last  long around here before it gets chomped, but sometimes things get temporarily lost for a year or so, between the freezers.
Have even wrapped once in plastic wrap, and THEN in freezer paper, followed by foil for VERY choice cuts/items.

Been finishing up some of the pork from our April  2009 hogs, and it looks, and tastes, great.
No degradation.
Have eaten some deer, etc 4+ years old wrapped that way. MIGHT have to trim an edge or two, but other than that GTG.

what added protection does the aluminium foil provide?

LOL, The Survival Forum is THE best place to ask that question!

Don't know, but lasts MUCH longer that way, compared to either one by itself.
I think it was suggested to the wife back in the '80s, during an Animal Sci course she was taking.
I cut, she wraps, so been doing it that way ever since.

so she wraps it in freezer paper and then a layer of foil over that?  how long do you store it?  I wonder if a double layer of freezer paper will work the same?

Yes. Tried double freezer paper and using AL on the outside seems to work better for us.
One thing, she has mad skillz when it comes to wrapping. Neat, tight, and about as airfree as possible.

Like I said, we usually try to use most stuff in 12-18 months, but sometimes it winds up being years, so we wrap for that.
(stuff gets "lost" soometimes.)

Ate some gator recently that I  I killed and triple wrapped as above in '09, and it seemed very fresh.
Deer, pork, etc all fine with Al over paper.

Thanks,  your responses is what I am looking for.  I am confident that this will work perfectly for me, and I already know how to wrap it properly since I did it a lot when I worked at a meat market a long time ago
