I've got an assload of spuds this year.  Been tossing around the idea of freezing grated hash browns, french fries and the such.

Have you done it and what were the results?

Best things I know to do are to make pierogies, potato soup, and gnocci.   Results are always outstanding.

I think you want to blanch them first.  That is all I really know though.  I pretty much got one potato for every seed I planted this year.  I guess you could call it a time consuming wash.

Dehydrate them..............make excellent scalloped taters and tater soup

My potatoes were a real dud this year!

As to putting some up, my mom can's them, there pretty much like the store bought ones in metal cans, only better. She uses the small ones and then puts them whole into stews and roasts. Good eating! We also boil a lot of the small ones then brown in a cast iron skillet with butter and pepper.

Well, I just got doing some hand cut fries. Blanched, chilled, double fried.  Probably not worth the effort, but the DIY factor is high since they went from ground to grease, to freezer here by my own hands.

Hash browns are next on the list.
