This is going entirely from memory and it's been a while since I've made it.
Dice up your tomatoes. Reserve about 25% of them. Send the rest through a quick blend or process or use a stick blender on them so you get a nice mash (not liquefied, not too chunky), then add the chunks back in. Add diced onions (I prefer purple). Salt, pepper, cayenne pepper, chopped fresh jalapenos or whatever peppers you have in the garden. Depending on spice required, more pepper juice or seeds. Fresh shredded cilantro.
