My wife was canning carrots the other day.

Two of the quart jars lost enough liquid that the carrots are sitting above the water line by about an inch. She put them in the fridg and plans to use them when she cans vegetable soup.

How long can they sit in the fridg before they go bad? They DID seal.
Any idea?

While I've got you here, what is the best way to can corn and get that fresh corn taste? We are going to freeze some, but we would like to try canning some as well.

An inch isn't anything to worry about if they sealed. But, now that you've put them in the fridge I'd go ahead and leave them in there no longer than a couple of years.

Corn is easy, water and a little salt. When we get ready to warm it up, we pour the corn in a collander, rinse it off and put in another pot with a little fresh water and butter. We pretty much do that with anything we can where salt is added since I don't like salt. I don't like frozen corn except in stews.
