Need recipe for cooking chicken (cut in quarters) in white wine. Had some years ago, GOOD STUFF. What kind of wine and a recipe would be Great....!! Thanks, Blade the bachelor.

White wine... Hmmm, how about red wine? Like Coq au Vin from Alton Brown?

Brine 1 hour in Sea salt and Rosemary
A Pinot Gris or Chardonay with some rosemary and maybe a garlic clove or two and then braise for a couple of hours
Remove from liquid, pat dry and apply EVOO (extra virgin olive oil), lite salt, and fresh ground black pepper.
Put under broiler for a few minutes until skin/meat crisps slightly.
Enjoy



Have done this a few times and it turns out pretty well.

.recipe works the save with white wine, its then called Coq Au Vin Blanc
