Anyone have a receipe for canning cabbage? I have looked through all my canning books and there is not one anywhere.
Suggestions much appreciated,
BTW: sourkraute (sp) is not an option. neither of us care for it.

Wish I had something more positive for you, but I'm not aware of any good way to can cabbage that doesn't involve pickling in some fashion.

Root cellar? Freezing?

Thanks Feral, I did see a wrap it in paper and store in a cool dark place, but I have more cabbage that is practical to store like that. I know there is a way cause you can get "seasoned cabbage" in the grocery store. Maybe it is trial and error time.

Here are some parameters for canning cabbage that I found in an older canning reference I have. These directions come immediately following the advice that "cabbage is not recommended for canning. Cold storage is preferred."

clean, cut into small wedges
soak in salt water (1 tsp per quart) for 10-15 min
rinse
boil 3 minutes
drain, reserving liquid
bring reserved liquid to boil
pack jars tightly, cover with boiling liquid leaving 1 inch headspace
at 10 pounds pressure, process pints 25 minutes, quarts 30 minutes

One of the things to consider is what dishes you use cabbage in. If you can get the cooking juice you use in the canning close to something similar to what you'll cook with, you'll be better off I think.
