Looking for ideas on what to do with Zucchini.

I've got a couple of huge (10-12 inch) Zucchini's and don't have a clue as to what type of recipe to use for them.

Any suggestions

As for the large ones, you can always make Zuc bread...

I've always cut them up into stir fry or I believe you can pickle them too.

One thing that I found this year which I think its great is Zucchini Carbonara. (Jamie Oliver Recipe). You can find it below:

I use zucchini in veggies packs a lot, with potatoes, onions, peppers, etc wrapped up in foil w/EVOO(or butter),S & P and seasonings on the grill! Yum!

You could do stuffed Zucchini especially if you have huge ones. Google a recipe or ask the Chef. I don't know off the top of my head how my Dad makes it and I haven't gotten around to making it myself yet. I guess you just scoop out the pulp and and mix that with sausage and stuff. It's delicous though.

We also bread ours and deep fry it or just sautee it with EVOO and garlic and toss it with noodles.

Just google Zucchini, so many options out there!

my wife makes zuccini bread that is better than candy.  I'll try to find the recipe and post it when I get home.
