I have some canned (as in cans from the store) tomatoes, okra and corn that I want to mix and recan into jars (as in pressure canned) This stuff is out of date ( I know it is still ok) but the better half has this thing about dates so just to satisfy her. So what to do? Just mix put in jars and follow normal canning procedures? Since this has already been cooked hot water bath? What say you? Thanks for any help. rustee |

You probably won't find this comment all that helpful, but I'll lay it out there anyway. I would not go to the trouble to re-can previously canned goods. They were cooked once when they went into their commercial cans and cooking them twice isn't gonna do them any favors. This is even more true if they're out of date. Doing so is, IMO, violating the first rule of home canning: choose only the highest quality and freshest ingredients for your canning jars. If you have to do it, you should find the mixed vegetable recipe that most closely fits your ingredients and follow that. |

I agree even if it turns out it's going to be a mushy mess Feed them to your pigs (you do have pigs right) and move on with new stuff this year. |

Several ideas to consider: Donate to the local soup kitchen....they will usually take out of date stuff. Save them and donate to the starving masses that stream out of the cities....they won't care about the date. Save the stuff for when all of your stuff is gone and there's nothing left....you won't care how it tastes. Use for bait if you hog or bear hunt. Give to a hog farmer......hogs don't care. |
