Ok... so even after all of my best attempts to not overbuy... I have a lot of food left over from the holiday. Deepfried the turkey, first time and it was AWSOME. and have a lot of ham left too, froze them both until I can figure out what to do with them. Any ideas. I have a bunch of canned Turkey chili and soup from turkey day, so I want some other ideas. Let's hear what ya got. |

Cut the ham or turkey into bite-size pieces, and mix with white sauce below. Serve over rice or noodles with a side salad or green veggie. Simple white sauce: Melt 1T butter in pan. Add 1T flour; mix to make a "roux". Add 1 cup milk and bring almost to a boil. Season to taste - I typically use pepper, cumin, and/or curry powder depending on my mood. Makes 1 serving. |

I'm going to have to do some searching for some more soup ideas I guess. Can never go wrong with a good ham and bean. I've gone the sandwich route to the point I can't stand it. And I love me some sammiches. I'm really looking for something I that can be canned so I can have it for a while. |

Like Bubbles said but we do a bit more planning. After we pick the turkey carcass clean I take all of the dark meat, the small pieces of white meat and any of the rest we aren't going to freeze as turkey slices and dice it all up in quarter inch pieces. I also carefully remove any trash, bone pieces and gristle at this stage. Then I weigh out 6 ounce portions on a kitchen scale and suck the portions in Foodsaver bags. These get dated and go into the deepfreeze. Since they're all ready to go all I have to do to serve it is make the white sauce. When it gets to the right thickness dump the microwave thawed turkey into it and it'll be ready to serve when the sauce warms the turkey. We put it over biscuits that my wife makes while I'm doing the sauce. If we start at the same time we can have creamed turkey and biscuits on the table in about 20 minutes from walking in the door from work. By the way I use the white sauce recipe from "Joy of Cooking". It uses 2 Tbs of butter and 2 Tbs of flour to one cup of milk. Might make a thicker sauce. Or it might just depend on how long you cook it. For us, this sauce recipe and 6 ounces of turkey over biscuits serves two. |
