My uber beefy recipe. 6cups strong beefbroth from cubes, 1/4 the amount of quickcure for the amout of meat you have. More kosher salt than you think you need, and several bay leaves. Boil this so everything dissolves. Remove from heat, add a hand full of peppericini, black pepper, and white pepper. Let cool close to room temp, remove bayleaves, and add your meat. Let it fester overnight in the frige. Put meat on racks, and salt/pepper them. Dehydrate per regular dehydrating procedure for your device. This will give you a very beefy, almost like corned beef tasting jerky. The other one I get alot of compliments on is my tomato based one. 1 large can of tomato paste, asmuch kosher salt as you think you'll need. Black pepper, peppericini. Enough Worcestershire sauce to thin it out alittle, Consistency slightly thingger than A1 steaksauce is what you are going for. It should taste like a tomato and A1 when you are done. Alot of the Worcestershire taste goes away after dehydrating Dehydrate per regular dehydrating procedure of your device. This gives you a very tangy tomato tasting jerky. |

in abig bowl. i dont meausre just add... pinch of sea salt. few turns of ground pepper whorshshire(sp) soy Kyrstal hot suace cumin ginger papirika orange juice lemon juice let it sit a few hours,, then dry it out. some times ill justgot saly/pepper and soy ..... or ill add garlic to it. matters how im feeling. so fari havent had abad batch yet. figure on the basics of soy/whoreshire 1-3 spices and you cant go wrong. |
