So what food could I store in a non climate controlled garage; ie  Wise foods, canned goods, water bottles? Would crawl space be better?

ANYTHING stored in those conditions will have a shortened storage life.

My grandma had wheat, rice, and beans stored in her attic for 25 years.  When she died, my uncle bought the house and started using all the food storage - he stated that it tasted no different than fresh stuff.  It is my understanding that it can lose some nutritional value, but its still very edible.

Under house.
Probably better than attic/garage. Take temp readings during the summer, as it may be surprisingly stable (unless you have stellar air flow and ventilation under your house). I'm sure "crawlspace" for you down south and me up north are 2 different things.



 



ETA: You would need VERY sturdy rodent/bug proof containers. Metal is best. Could you dig out a spot for a couple 55 gallon barrels (the open top variety with lids/clamps)?
