Flour or corn? Rolling pin works best either way, but you can go ahead and buy a specialized press if it makes you feel better. Kind of like making hamburger patties. Thats crazy talk. Smacking a small piece of dough back and forth ih your hands 20x is just as good, and a lot xheaper. Many restaurants in LA keep up, as a commercial entity, making tortillas by hand. |

When my wife started making our flour tortillas from scratch, I bought her a cast iron one. I did the job, but wasn't very good. After watching her fight the darn thing for a few months, I got her this one.
It's like night and day. The heat really makes the difference. Now she makes huge batches at a time and stores them in the freezer. I'll see if I can't get her to chime in on this.... |

We have a gas station here in south Texas that has a taco joint in most of their stores. They use a rolling pin and make tortilla as fast or faster then most machines can. Drop the dough ball and roll it out, toss on grill, flip, make tacos.
Laredo Taco Company will be the reason I have diabetes eventually, I can't go a day without something from there and the fat, flour, and red meat are going to kill me eventually. I'll die happy though. Edit ipad autoincorrect strikes again |

Hey now...I've read from one expert that easy to find products will still be available shtf....so I don't see fault in his plan...or following such "modern " advice... sorry, couldn't resist. OP, for flour tortillas, all you need is a rolling pin. Corn tortillas can be made the same way, but my wife prefers to use one of those cheap presses. |

We use a cast press bought at a local "Mexican" market. There are lots of ways to FORM the tortilla..
What you REALLY want to know is how to handle your dry corn so you can end up with the proper Masa flour to use. Linky We heat with wood, and store our ashes in a can, just for this. As far as running to the store and buying them.. LOL. |

I was skeptical of gluten intolerance until the last 6 months. Started 20 years ago when I couldn't mac'n cheese without diarrhea, then spaghetti, then pizza, now not much more than a biscuit will set me off. So I'm eating shitloads of store bought tortillas and canned hominy. But you get like 100 for $3 at the store. My kids love them when you heat a little butter on a skillet and reheat them for tacos. |

We use a cup of ash to 1 1/2 cups of dry corn. Put in bowl, cover with warm water, steep overnight. Rinse well, then rub the hulls off with a dish towel. Grind.
Use a couple cups of the corn flour add a bit of salt, water to form a dough.. let rest for few minutes.. form balls.. squish. |

| The best I have seen is the guy had what I can only describe as a big pile of dough on the counter , he made a ball pressed it flat and grilled the tortilla when you ordered . It was excellent . I have been to 2 different places that did that both were great . |

I got one of these at a garage sale for a few bucks, it's non stick, flour and water in the kitchen aid with dough hook then drop a small ball and smash it, 10 seconds later a cooked flour tortilla
