I was told that dried beans aren't good for long-term storage because they get tough and become inedible.

I did the ole' Whaaaaaa?

Anyway, is there anyone who can confirm or debunk this?

I was getting ready to pack some away in mylar and O2's.

They pack em up in all the big name places like emergency essentials, augason farms, pleasant hill etc in mylar and O2 absorbers and pails with at least a 10 year life and some say 25 in cool dry area. I've done it myself for navy beans.

Old beans do take a little longer to cook but my wife uses a pressure cooker and has never had a problem.  This is for pintos.  We don't have much experience with other types of beans.

Pressure cookers ftw with dried beans even if they are old. Mine always come out much better than the standard boil/simmer for hours on end.
