Hey guys, I'm working on sealing up food in mylar bags and 5 gallon buckets right now.

I just got 5 buckets in and realized I didn't let the rice thaw from the freezer.

I am vacuuming out most of the air and using 2100cc oxygen absorbers per 5 gallons.  

Am I going to have mildew problems or will the rice ruin from the condensation?

Hopefully, you sealed the edge of the mylar bag so you could open and reseal it again later...

so, now is "later".

Open the rice up, let it warm/dry outside of your mylar bag.  Reseal.

I forgot I had extra room to reseal, thanks for the tip.

I opened one, and it seems very dry inside.  I think I will reseal this one, and check one of the buckets in a month or two.  If it's good, I'll leave the rest of the buckets.  From now on though I'll try to remember to let the rice thaw

After tossing in the O2 absober, I seal the mylar up about 99%, push all the air out and then seal it all the way. I then take a pin and poke a hole in the topand push out as much as i can of the remaining air and seal up the hole. The O2 absorber will do the rest. In a week or two, it will look like a professional vacuum seal. Dont bother with dry ice or vacuuming. My 2c...
