I've found a local grower of wheat, winter wheat should be ready in July. Some ?s

Is 200lbs a decent amount to buy/have on hand? How many cups of flour from a lb of berries? How many
5 gallon buckets with mylar will I need for 200lbs?

Can you tell I'm new to this? Thanks gang.

It takes three 5 gallon buckets to hold 100# of wheat/rice/corn. Two cups of wheat berries will make three cups of flour, four cups of berries will make six of flour and so on. I bought the Grainmaker mill and it is a tank! Well built and durable. Whole wheat bread is hard to get just right so be prepared for some failures when you start out.

I didn't have enough time to get a lot of info from him the other night.

Is 200# a decent amount?  Depends on whether you are going to use the wheat or not.  I suggest you start with the grinding, baking bread, etc.  If you do they say about 300 pounds per person per year would do it.  One cup wheat berries will yield about 1.25 to 1.5 cups of flour.  About 6 oz in a cup so about 4 cups of flour per pound of berries +-.
