I spoke with a Organic farmer today and the discussion turned to packing wheat and beans with O2 absorbers.  He did a couple experiments and found that the wheat and beans that were stored with O2 absorbers didn't sprout as well.  Something else to think about I guess.

I've heard and read similar reports.  I don't remember why but I seem to remember that being devoid of oxygen damages or kills the small germ of life that is in the wheat.

Very interesting. I'd be interested in knowing the results of nitrogen packaging, and if the same problems are experienced.

Probably not if your only concern is eating it.  However if you are planning on growing it too then it definitely becomes a factor.

I don't mess with sprouts(except for the ones that come in my chinese food) , but there are valid reason that people do.


As water is introduced, enzyme inhibitors are disabled and the seed explodes to life. Germination unfolds, and enzymes trigger elaborate biochemical changes. Proteins break into amino acids. Water-soluble vitamins such as B complex and vitamin C are created. Fats and carbohydrates are converted into simple sugars. Then the seed expends all its energy to break through the soil. Weight increases as the seed absorbs water and minerals.

Through the miracle of germination, thiamin increases five-fold and niacin content doubles. Vitamin C, E and carotene increase. In fact, the vitamin C content becomes as rich as tomatoes. Sprouting is accompanied by an intense enzymatic hydrolysis of protein. Stored proteins are broken down into component amino acids. Because the protein is predigested, sprouts are more easily assimilated and less gas-forming than dried beans. Digestibility is vastly improved.

Seed will last a long time, as designed by nature because they found seeds that were perfectly growable in the Egyptian pyramids because they were stored in a dry atmosphere of the desert.  I think the problem is keeping the seeds from molding. So instead of using O2 absorbers, I would THINK it probably better to use H2O absorbers for long term storeage of various seeds.

I believe it may have been edible but probably wouldn't grow.  Can you provide a link to this info?
