Can anyone explain why stars are not visible in photos taken by game cameras? Shouldn't they be very bright like an animals eyes?

Eyes reflect the light from the flash. The camera is probably not light sensitive enough to capture the light from the stars. Just my thoughts. I may have to try with one of mine just to be sure.

I take star pictures and I need at least 5 minute exposures with 1500iso.
