Made some ribs today trying a new technique. The results were absolutely fantastic. I coupled them with vinegar based coleslaw which pairs beautifully with any smoked meat, pesto pasta salad and corn on the cob.

Today on taco Tuesday:

After getting this idea on from Texas BBQ joint on the toob, I am marinating some boneless pork shoulder chops in Coca Cola, orange slices, onions, and a splash of soy sauce.  24 hours now.  

I will put them in the Instant pot for 10 minutes, cool, rough chop, and then grill/sear on a flat top for a quick gringo carnita recipe.  

Tuesday Tacos will be the final result.

Made some Mediterranean style Kofta using a ground lamb/beef mixture. Served on top of saffron rice and with Tzatziki,  naan bread and a simple salad.

TODAY.

chicken breast pounded flat and  rolled around multi colored peppers.  Dried edged in flour, fried for color and finished in the oven.  Meanwhile
i made a pan sauce with garlic, onion, mashed anchovies and parm cheese.   Normally I make the sauce with a dot of mustard and no anchovies.   I skipped the cream in the sauce and went with just a bit of butter to finish.

I saw this done with boned rabbit but chicken is easier to acquire.

Thanks for the shout out! Let me first say this is perhaps the best meal I've made so far this year. The Bavette steak is from Snake River Farms is of unbelievable taste and texture.

I wanted to make an authentic Argentinian meal. The Morrenes con huevos were super easy and surprisingly delicious. I had the leftover half for breakfast this morning.

Cut a large red pepper in half lengthwise. Remove the seeds and pith. Place a small pat of butter and sli e of mozzarella cheese in the cavity.

Place it on your grill and cook until.the pepper is getting slight charred and cheese melted.

Drop a fresh egg in each half and continue to cook until.thebwhites have set and the yoke is still runny.

It's hard to beat a good poke bowl!!  I'm not handy in the kitchen, at all, but a local restaurant makes an amazing tuna poke, which I haven't had in far too long.

Poulet Forestière (Forest Chicken) using shitake, lion's mane, and baby bella mushrooms (the closest mix of wild mushrooms that I could source), served over skillet-fried butter-rosemary bread to soak up the sauce, with French-style green beans tonight. Finished with a splash of sherry vinegar for brightness. Fantastic!

First pseudo brisket. Poor man's brisket....chuck shoulder lol.

Always wanted to do a brisket figured I couldn't really screw this up. Bark was almost sweet in flavor, but no clue where that came from. Literally used salt and pepper and hot sauce as a binder.

Pommes boulangère using homemade duck stock last night. I made this to have with re-warmed NY strips from the night before, but discovered my kid had taken not one, but both leftover NY strips to eat at work on his night shift. 😱 So, this was dinner for the missus and I, lol. I can't complain.
