The first thing I install on every Android device is SwiftKey, a fantastic keyboard.

Waze for navigation.

Everything else will depend on what you do.

Google Drive, Sheets, Docs.

MS RDP client.  ConnectBot (ssh client).  Wifi Analyzer.

Podcast Addict if you're into podcasts.

SystemPanel Lite is a decent free system monitor.

Fast Image Viewer if you work with TIFF files.

It makes a smartphone into a SMART phone.

I use it to do all kinds of shit, mostly control settings on the phone based on conditions (at home, in the car, at work, smartwatch connected, etc). I also use it to interface with my Home Automation system via it's API. It automatically does shit. It is a bit advanced, but it's worth learning about and using.

Something like that comes included on Motorola phones, based on location, charging or not, wi-fi or not, moving or not, etc, it can start apps, change volumes, turn on / off features to save battery, etc.  Motorola calls it "Motorola Actions" on older phones, and  "Moto" voice/actions/assist/display on the Turbo phones, where the voice is an on-board voice/gesture/face recognition chip in the Turbo models, so it doesn't send it over the network for interpretation.    If you roll the camera in the x axis, it starts the camera, snapping it like a hammer turns on the flashlight (so does dropping it), wave over the phone to silence ringer, etc.  those are default, but you can change them to whatever you want.

Is that pretty much what Tasker does, or is it more involved?

That's some of what Tasker can do. It's pretty much a macro/scripting app... it can do all kinds of shit. Changing the phone settings are just a thin slice of what Tasker can do.

The ones that were pulled from the store typically have some sort of malware in them (contact list scraping, use camera/microphone or other).  

Also:
AVG Antivirus
Lookout

Those are almost required when you install any apps.  Once your phone is down to stable app config, then just keep the Antivirus, which blocks malicious texts and such.

CamCard is a business card organizer. I get overrun with business cards.

Camscanner allows you to scan documents with your phone and turn them into PDFs

Pockets allows you to save a browser page (article or whatever) to organize and view offline and you can share it across all your device and PC

Greenify allows you to control and hibernate apps so they are not running in the background and being a power hog

Here I have not used yet but its a mapping app
