I like all kinds of chicharones/tsitsaron. Cracklin's, tsitsaron manok (chicken skin done the same way), and tsitsaron bulaklak (pork peritoneum).
I used to pick up 5 gallon buckets of chicken skin from the butcher, and render them in my turkey fryer, then make lumpia (Filipino fried spring rolls) in the rendered fat. YUMMMMY!!! You have to start out slow with the skins, but the more fat you get, the more you can do at a time. Great with beer, of course. And yet, here I sit in Saudi Arabia where pork rinds are illegal. |

I was pleasantly surprised to order these in a nicer Des Moines restaurant and have exactly that show up at my table. My date was fucking disgusted. |
