This is my favorite chili recipe so far.  Transcribed it from an episode of America's Test Kitchen.  It's wonderful.
America's Test Kitchen Texas Chili



-----------
Chili powder:
6 large ancho, New Mexico, or other dried chiles as desired



1 TB Mexican oregano



2 TB cumin, toasted and ground



Water, as needed
Toast chiles in 350F oven for about 6 minutes



Remove seeds and stems from chiles, and grind into powder.



Add oregano and cumin.



Measure out 2 TB of chili powder per pound of meat.



Make a paste with water, and set aside to bloom.
Chili:
8 oz. of bacon, chopped



4.5-5 lb Chuck roast, trimmed, cut into 1-inch pieces (3.5-4.5 lbs after trimming)



salt & pepper



1 medium onion, chopped fine



chili powder



5 cloves garlic, minced



4-5 small jalapenos, minced



2 TB lime juice



1 cup tomato puree



7 cups water



1/2 cup masa harina in slurry with 2/3 C water
Render bacon in heavy dutch oven over med heat.



Remove bacon to paper towels and fat to a bowl.



Put 2tsp of drippings back into pot.



Season meat with salt & pepper.



Brown in batches over medium-high heat. Add drippings with new batches as needed.



Reduce heat to medium, and add 2 tsp drippings.



Sweat onions over medium heat, using them to help deglaze.



Add garlic and jalapenos.  Cook briefly, then add chili powder paste.



Cook 2-3 more minutes.



Mix in browned meat, cooked bacon, lime juice, and tomato puree.



Add water, and mix.



Simmer for 2 hours, uncovered.



Stir in masa slurry.



Serve with sour cream, avocado, cilantro, etc. as desired.

This is close to my Mom's chilly recipe.  The mix of pork and beef gave it the sweetness, no sugar needed.
Will try this in the crock pot this weekend for football, yeah!

Beans?  Heck  yeah, only preferably kidney beans for me.

My go to recipe:

2 lbs. London broil cubed
1 med, onion minced
2 cloves garlic minced
can of Rotel
2 tbs diced pickled jalapenos
homemade chili powder to taste (I make a variation of Alton Brown's recipe.)
2 cups of liquid (beer or water)

Brown the beef in batches reserving the fat drippings.  Remove beef, and use reserved beef drippings for sauteing onions till glossy, and transparent then add minced garlic to saute.  Return beef to pot, add Rotel, add jalapenos, add chili powder, add liquid, and stir.  Bring to a boil, once boiling reduce heat to simmer, cover and simmer until thickened.

Serve over whatever you want and add whatever you want.  I like putting it over Fritos or crushed saltines, and putting some diced raw onion and shredded cheese on top.

4-K Chili

From Chili Champ Ed Paetzel

The four Ks are for the names of Ed's children, Kim, Karl, Kevin and Kris.



  • 2 or 3 tablespoons cooking oil (more if needed)


  • 4 cloves garlic, peeled and smashed with the blade of your knife


  • 1 large red onion (chopped)


  • 2 mild canned jalapeños, seeded and chopped (This will give a heat level that a five-year-old will like. This chili is not for fire-eating contests.)


  • 5 pounds tender, lean meat, chili ground or hand cut


  • 1/2 teaspoon dried oregano


  • 1/2 teaspoon dried basil


  • 1/2 teaspoon dried thyme


  • 2 rounded tablespoons cumin (comino)


  • 2 rounded tablespoons ground New Mexico red chiles


  • 2 level tablespoons McCormick or other brand chili powder


  • 1 teaspoon paprika


  • 1 teaspoon ground black pepper


  • 2 teaspoons salt


  • 1 cup drinkable Texas Merlot Wine (Never cook with a wine you won't drink.)


  • 2 cups hardy beef stock


  • One 15-ounce can tomato sauce


  • Water, if needed

Place cooking oil and garlic in your cooking pot at the same time. Turn on heat and brown garlic. When garlic is nicely browned remove it from the oil and discard. The cold oil absorbs the favor of the garlic as it cooks without being bitter. Brown the onion, and jalapeno. Brown the meat in same pot with onion and jalapeño.

When meat is brown, put all the spices in and cook and stir until the meat is thoroughly covered with spices. Pour in wine and cook for about three minutes while the alcohol is evaporating. Pour in the beef stock and tomato sauce. If meat is not completely covered with liquid, add a little water. Do not add beer to this chili. It makes it bitter. Cook chili until done. You can taste along the way. Do not let chili get dry at any time.

Why do people want to put beans in chili?

Especially canned beans, for God's sake!

Beans are a perfect side dish with chili. Cooked in their own pot, their own recipe. They should take about the same amount of time to cook as the chili. Which is in another pot.

It's actually sad that people get their "chili" or "beans" out of a can. If it's not the end of the fucking world, make 'em from scratch and separately. Your kitchen will smell wonderful, you'll be hailed as a real "chef".

Even though any fool can make proper chili and beans.

No fucking burger meat either for that matter. Stop that.

A fellow ARFCommer gave me the BASICS for this recipe, but I modified it with my own choice of spices for my own particular tastes.





2Lbs of Ground Beef




1 Green Bell Pepper julienned


3 Jalepenos sliced


1 half of yellow onion chopped







1 Can of corn


1 Can of Red Kidney beans


1 Can of Black beans


1 Can of Pinto Beans







then I sort of do the following without any real measurements...


Spices/Sauces:


Some Worcestshire sauce


A bunch of Sriracha sauce


Red pepper


Seasoned Salt


Cumin


Corriander seads


Mustard seeds


Paprika


Squirt of Lemon or lime juice.


Some BBQ sauce






I cook the beef, sautee the veggies, and mix in the canned beans and corn, add a bit of water to help dissolve more of the flavors of the sauces/spices I put in.





I know it's bastardized chili as all hell, but I find it to be absolutely delectible to my taste. I serve it with cheddar cheese, sour cream, and a all topped with some (yet more) sriracha sauce.







Call it chili, or call it whatever... I like it, and that's really all that matters to me.

I forgot I posted in this. I tried some of a store bought ground up and it was terrible I almost puked.  


What brand of cumin do you use?  Or is it best to grind up your own like someone else said?

Toast dried chilies in a frying pan, put them in hot water for 15-20 minutes to rehydrate.  
In dutch oven, add a little oil and brown a diced onion.
Add whatever meat and chopped fresh peppers I have on hand.
Put rehydrated chilies in the food processor with some fresh chilies or garlic if I didn't already throw it in the dutch oven.
Dump chili sauce on meat and allow to cook fully.

Sometimes I'll add toasted cumin, cocoa powder, bay leaves, cilantro (more of a garnish), or whatever I decide to add... I have no set recipe.
