2 whole slabs pork baby back ribs
Dry Rib Rub of your choice.
BBQ Sauce of your choice
Braising Liquid:
1 1/4 cup Beer
2 Heaping tablespoons of your BBQ sauce
Ensure ribs are thawed if frozen, rinsed with cool tap water and patted dry. Place baby back ribs on aluminum foil, shiny side down on rimmed baking. Sprinkle each side with LOTSA dry rub. Pat the dry rub into the meat. Refrigerate the ribs over night covered with aluminum foil.
Preheat oven to 250 degrees.
taking your top sheet of aluminum foil you will now fold an envelope with the end open for your ribs to cook in. You must leave the end open to pour in your braising fluid.
Mix beer and BBQ sauce in a Microwave proof container on high for 1 minute.
Place the ribs on a baking sheet. Open one end of the foil on each slab and pour half of the braising liquid into each foil packet. Tilt the baking sheet in order to equally distribute the braising liquid. Now fold your foil packet shut Braise the ribs in the oven for 2 1/2 hours.
Remove your Ribs from the open and carefully open the aluminum foil so you don't get burned by the steam. I use tongs. Now drain the juice off and place them back on the baking sheet. Slather them with BBQ sauce and finish under broiler in oven or on your charcoal or gas BBQ. You want to cook them at high heat just enough to crispy them up and slightly caramelize the sugars in the BBQ sauce.
These ribs will be melt in your mouth tender. You shouldn't even need a knife to cut them as you will be able to pull them apart.
