Nailed this beauty the other day and decided to make a meal out of it.





I opted to follow the "step on tail and yank" method but I knew the tail would rip off, and it did, so I had to do it the hard way - Partially done here




All done! After this pic was taken, I cleaned the squirrel in cold water and got the hair off, what a pain. I continued cutting and took the front and back legs off and the "backstrap" tossed the rest.



All's assembled here;
1 cup of flour since this was only one squirrel, don't need much.
1/2 cup of milk
1.5 cups of water (some extra on hand)
salt and pepper
Onion, sliced to your prefered amount
Skillet. I used my 6" cast iron.

Oh yes, musn't forget the special guest here - Was supposed to use shortening BUT I had the best thing –– BACON GREASE! (green container)

And of course the Tree Rat.



Salt and Pepper the flour to taste, I used a lot of pepper.
Dredge the Squirl in it until evenly coated (see next pic).
Save the remaining flour for later.





Mmm.. Bacon grease melting... *sniffs*
Keep the skillet nice and hot don't let it burn. Enough grease to come up the sides about 1/2"



Drop the squirrels in, do each side about 2-3 mins until it turns brown and IS COOKED. (see next pic as well)





Remove squirrel and put on a towel to drain excess grease, add onions to pan, brown it. (see next pic)




Add the remaining flour, milk, and water here to reach desired consistency (pasty goop for me) Bring it to a boil.


Turn it down to a simmer, add the squack peices.



Cover for 10 minutes or so.




Served!  Choice of drink is Woodchuck Draft Cider, Amber (I also like Granny Smith).

That's the particular gun I used to nail this beauty. 5mm (.20) Benjamin Sheridan Blue Streak.


Edited to add –– The meal was GREAT. Very very good.. Also, The rice is Rice Pilaf from Uncle Ben's (the bag that you just microwave, I know that's a fail there but it's very good)

I had squirrel meat many moons ago when a friend of my parents cooked some up.  I remember it being quite tasty dark meat.

Killed it and prep'd it yourself...no napkin, no knife, and the beer hasn't been opened yet would merit point deductions, but not in this case.  Plus, it actually look really good.

You've got yourself some full frontal WIN right there, I didn't know Yankees ate home cooking like that.

10/10 plus bonus for killing it yourself.

ETA: thats how you introduce children to hunting, take some tree rats, ducks, doves or whatever small game you can hunt without too much hassle. Let the little ones harvest it, you cook it up and make a big production out of it. Come dinner time they get the satisfaction of eating the results of their labors, that lesson tends to sink in for life.

Ill give you a 10 for that.

But why add the already cooked meat to the gravy and simmer?
Would this not remove the slight crunchy goodness that you achieve by frying with batter. I would keep the crunchy meat warm till the gravy was done then pour it on top right before it was time to eat.

Nice. Good to see some squirrel eaters are still around. I used to hunt them with my Dad and have eaten too many to count. My Dad's technique was to pressure cook them for awhile before frying them. They go very good with rice and gravy and home-made biscuits.

Not likely to be cooked al the way through by just lightly pan frying.

I give it a 10/10.  And that is even without many required items.

For that guy who said "pfft" an air gun –– well I can say that an air gun has killed quite a few of these critters over the years and I don't think the neighbors would appreciate me pulling out something else.

Grug - I would say yes but not in my immediate area I'm not sure how many people have acutally shot a squirl in their back yard and cooked it in the "township" I'd say not too many if anybody!

Used to eat alot of squirrel gravy with my dad and grandfather.  They would fry the whole squirrel, then crack the head and eat the brain.  That was a little too much for me.

I wouldn't eat the brain. I'm not willing to take the risk these days with the parasites and the like.


Grug - It was GREAT. I'll edit the OP to add that... It tasted.. Somewhere close to dark meat off a chicken/turkey but a bit more on the heavier side.. It tasted like Squirrel! Go try it, you won't be disappointed.

When I was a kid we ate rabbit and squirrel all the time.
Used to rabbit and squirrel hunt with my dad all time in Ky.
