My standard recipe is

6 jalapenos
6-12 roma tomatoes (usually 8, depends how hot i want the sauce)
1 whole yellow onion (medium size)
4-5 cloves of garlic
1 tlbspn of ground cumin seed
salt (to taste)
couple pinches of fresh cilantro

and i either add habaneros or more jalapenos (or both)

edit: throw in a blender  for about 10 seconds

Sounds good!  I usually use the white onions and chop up an entire small bunch of cilantro.  I also  like to throw in some chopped green chilis for some extra flavor.  I don't use the cumin seeds.  I usually forget to buy them.

I put mine in the refrigerator and wait for a couple days for it all the flavors to mesh.

Now you got me wanting to make another batch.

eta:  I don't use a blender.  They're evil.

My uncles Tomatillo salsa recipe:
12-15 tomatillos
6 or so red japanese chilis
cilantro
splash of vinegar
pinch of salt

Peel the skins off of the tomatillos, rinse them, and put them in a frying pan and heat them up real nice over the stove. Put in blender. Quickly heat the chilis in the frying pan on the stove. Make sure you don't burn them or else you'll need to start over. Put the chilis in the blender. Slice up the cilantro and put in blender. Put a splash of vinegar and a pinch of salt in the vinegar and blend. My favorite salsa.

This is actually called Salsa Fresca or Pico de Gallo

15-20 Roma Tomatoes chopped
1/2 bunch of cilantro chopped (more if you like cilantro)
3-4 habanero chilies (seeded..more if you like it hoter, but be careful!!!!)
4-5 spring onions chopped for color
1 med yellow onion chopped
1 tbsp mexican oregano
4-5 cloves of garlic chopped
2 tsp salt
1-2 shots tequila (can be left out..I don't add it all the time)
3 roasted anaheim chilies
juice of 1 lime

Mix it up..Wait a day or so and enjoy

If you're a whimp, you can use wussie peppers instead of habanero's and if the tomatoes aren't real juicy, add some tomatoe juice.
