With a large roast I wouldn't put any salt on the meat. It will draw out the moisture.

i wouldn't think that a properly prepared prime rib (med rare) will have been cooked long enough to dry out

Salt liberally. pepper and garlic slices in shallow pockets just under the fat.

Healthy as what?  Kosher salt is the ONLY salt I use when cooking steak/roasts/meat...

So here is what I did last saturday.

1/2 a cup of sea salt
1 cup of horse radish
1 full clove of garlic, not the little pieces, but the whole bulb crushed and then blended
1/2 a cup of oilve oil
some basil and oregano also blended a little
1/4 cup of black pepper

All mixed together and rubbed on the whole thing
Put in a broiling pan at the bottom.
Filled the pan with chopped carrots, red onion, some more garlic and it said parsnips, but I could not  find any. Drissle those with more oil.

Bake at 350 for 20min per pound.

The veggies in the pan won't be edible. Makes a really good crust.

Made my mouth water and drooled on myself typing this up.

Sea salt is a little better for you than kosher salt I think.

Sorry, I missed your earlier sea salt reference.  I thought you were referring to regular table salt...  I agree and I cook with sea salt, just not meat because I don't like the added "flavor".

What we need here is a dinner pic with a roast. Problem solved the ARFCOM way.
