Looking at getting an outside security camera has me contemplating a power source. Where I might mount cameras could have power brought to them (by an electrician) without too much ado, but I'm wondering if I can use a wireless PoE Injector. Besides the WiFi router my other devices are communicating through, what (else) do I need to make this work?

If it's power over ethernet capable then a PoE injector or a switch with PoE support would work perfectly fine.  You'll want to make sure the device PoE is using IEEE 802.3af which is the standard for PoE and not some proprietary power over ethernet.

Most cheap POEs will just work when plugged in. They're unmanaged, dumb and featureless, which makes them perfect for a flat LAN environment ... like a house.

Read the fine print on the specs, though. Some manufacturers will have, say, 48 ports, but only capable of powering half at any given time.  There's also some switches that like to run at different power.
