Lets go through our checklist:





Beans - No


Tomatoes - No


Chili Powder - No


Beef - Hell No

What we do have:





1&1/2lbs Tomatillos


5 Garlic Cloves


2 Large Jalapenos (chopped)


1 Bunch Cilantro (chopped)


3.65lbs Pork Shoulder (trimmed of excess fat and cut into 1 to 2-inch cubes)


2 1 Large Yellow Onion (diced)


1 Tbsp Oregano


2&1/2 Cups Chicken Stock

















Oh yea, we're making Chili Verde





Remove papery husks from tomatillos and rinse. Cut in half and
place cut side down, along with 5 unpeeled garlic cloves, on a
foil-lined baking sheet.








Place under a broiler for about 10 minutes to
lightly blacken the skin.  Remove from oven, let cool enough to handle.








Place tomatillos, skins included, into blender.  Remove the now roasted
garlic cloves from their skins, add them to the blender. Add chopped
Jalapeño peppers and cilantro to
the blender.








Blend until all ingredients are finely chopped and mixed.








Season the pork cubes generously with salt and pepper. Brown on all sides in olive oil, set aside.








Pour off excess fat, add oregano and place
the onions in the same skillet and cook until limp.








In a large soup pot and add the onion mixture and the pork to it.  Add the tomatillo chili verde sauce to the pork
and onions.  Add the chicken stock.








Bring to a boil and reduce to a slight simmer. Cook for 2-3 hours
uncovered or until the pork is fork tender. (Will cook down considerably)

Although this is true, in a literal and technical sense this IS chili, it still is NOT chili.  It's not chili by the assumed definition of the majority of people.  If they have an assumption chili is a thick sauce with meat but the meat is beef and the sauce is tomato based, well, when there are chili threads, they are expected to revolve at least partially around that premise.  Although this looks delicious and I would likely enjoy it, it isn't going to be filed in with my "chili" recipes.  For what it's worth I tend to think that red sauced chilis are gross when they contain beans, and that noodles enhance the chili, so I'm probably a minority here as well.

I wouldnt call it chili, but I'd take a bowl of it any time.

To make it epic you need to fire roast some hatch peppers and get them into the mix...some in the blender and some left as chunks. Try it....you'll thank me.

I know both of the above...  I was saying people saw this thread and didn't think chili verde.  I also said I know that I'm the minority in thinking so, but prefer chili with no beans and with noodles.  That's just how it is at my house.
