During the factory seconds sale, I bought a Manix II and a couple of PM's.  No issues with the PM's, but I understand why the Manix II was a reject.  It seems to have an imperfection (smudge seen at the top/spine of the blade) in the metallurgy/composition that causes it to bleed black into food when using it for prep.  Now I love the knife and use it daily.  However, I'm starting to wonder if I should stop using it for food prep due to potential harm.  I can wash it real good and it'll all but disappear from what you see here. But it still comes right back with use.  Anyone experience this before or know what this is?

Solution: don't use a folding pocket knife for food prep at home.

Dear arf, Im spreading cheese on my saltines with my Buck 184 Buckmaster and it gets cheese stuck to the blade and stains my collectible knife.

Any way to prevent this?

Do you clean your knife prior to prepping food?  What about all the other non edible shit you run your utility knife through?  Nevermind you just said the coating is bleeding into your good.  

Prepping food in the scouts while camping is one thing.  Using a pocket knife in the kitchen is pants on head retarded.

Many so called "knife guys" will only use their knives to open boxes which contain new knives, and food. Anything else they'll grab a box cutter for, because they don't want to hurt their pocket jewelry.

Sure there's better tools for the job.  But if a given tool works just fine...why go out of your way to get the perfect tool?  

I've got a letter opener....does that mean I should walk three rooms over to grab it instead of using my pocket knife?  I've got a box cutter....should that be the only knife I use to open boxes?  And where does it stop...only a cheese knife to cut cheese and a butter knife to spread butter and so on??

Whatever food you're cutting is probably oxidizing/staining the blade. It's just cosmetic.

Why you would use a tiny knife for food prep is beyond me though.

Assuming it turns black on an otherwise white metal surface, it’s likely that acids in the food are causing localized oxidation of un-passivated metal.

The chrome in stainless steels oxidizes in air, creating a passivating layer on the surface. If you have a local area in the blade that’s short on chrome, it’s no longer stainless there.

That makes sense.  Now is what it gives off (blackness) harmful to consume and similar to a rust or is it mostly the acids from food just discolored?

I used my spyderco folders as my lunch box knife, because I could fold it and put it in my lunch box.

I used one at home for my daily salad making because it was the sharpest and best size for what I needed, and I could fold it and put it in the drawer.

Now I use a small spyderco kitchen paring knife for that, I forget the model at the moment. I have a larger spyderco kitchen knife, the yin or yang, I have them both, I use the non serrated one the most. I wish they still made it.

I've used several types of spydie steel in food prep, I've never gotten black deposits on food though. I clean and dry all of my nice knives after each use.

Depends on what you lube it with. If you know you're cutting food with it, use a food safe oil obviously. If this particular knife is leaving oxidized metal in your food, I'm going to go out on a limb and say that it's probably not a great idea to eat it.
